Meals just thrown together in a hurry

The idea here is that you don't have to go buying anything new, you just use what you already have, things that are already opened - such as your bag of rice, some peas in the freezer and so on - and do a minimum of work, for a perfectly presentable meal.

Rice and peas

Ingredients:

Method:

Put the rice in a cooking pot, add the peas and salt and then enough boiling water from a kettle to cook the rice.

Boil until the rice is cooked enough for you.

Drain off the water and put the rice back in the cooking pot.

Add the coconut milk and the chilli and mix in well.

Put it in your lunch box and that is all there it to it.

Nori Soba

Ingredients:

Method:

Put the soba and the nori into a cooking pot and add boiling water from the kettle.

Bring back to the boil and cook until the soba is just soft.

Drain off the water.

Add the sesame oil, light soy sauce and chilli pickle and mix in.

Put it in the lunch box and pour a thin diagonal stripe of dark soy sauce across the surface; or, as an alternative, use hoisin sauce instead.
